KALE AND MUSHROOM SOUP

Delicious vegetable cream, good for breakfast, lunch or dinner

Enjoy it with crackers or toast for breakfast, it can be an excellent IDEA to complement a lunch or just want a light and healthy dinner!

Ingredients:

Oil, onion, tomato, mushrooms, garlic, salt, water, beet leaves, KALE, avocado, soy milk or almond milk

nutritional yeast,CILANTRO.

How to make it

Sauté onion, tomato, garlic, with a spoonful of oil, then add the water (I USE approximately 3 cups) when it begins to boil remove from the fire and add 3 tablespoons of nutritional yeast, salt to taste,  KALE, beet leaves, and wait until it Cools a little, pour into the blender (I USE VITAMIX ) blend until obtain a cream, add a little of the soy milk, CILANTRO and avocado (about half avocado).

note:

If the cream is too thick for your taste add more soy milk at the moment of blending, it is better to cook in little water and then add more if necessary.
You can also use almond milk instead of soy milk
